In Italian, you say Grazie or Mille Grazie as a thank you… or a thousand thanks!
For this year’s Thanksgiving I think we all need to count our blessings.
We aren’t doing Thanksgiving here, but I did do my Tuscan Thanksgiving menu for my zoom class last Sunday.
Saffron Risotto served in a Roasted Pumpkin
Porchetta with bitter greens
or Turkey Porchettata
Oven roasted vegetables with Tuscan Herbs
Simple panfried brussel sprouts with pancetta and olive oil
Instead of a pecan pie, I make a Tuscan Crostata with fig jam and walnuts
I wish everyone a peaceful stressfree thanksgiving.
I am heading to the hospital… for some presurgery exams. This year has been one of Doctors, hospitals and surgeries. I am thankful that I feel good and have the time to take care of myself.
I am counting my blessings… over and over.

Since last Thanksgiving my dear wife of 53 years has undergone knee replacement, diagnosis of breast cancer, a double mastectomy and chemotherapy, and here she sits beside me and is cancer free. Ask me what I am thankful for and I could give you a list of laughter and joy.
