We had a very, very wet spring and summer was late in coming. But now, it is here full blast.
Temps are hitting 100 and humidity at over 80% in Florence.
Prosciutto and melon, salami and cheese, mozzarella and tomatoes, tuna and bean salad.
So many options for NOT cooking.
But, I am cooking. Classes go on in the summer and I also get cravings!
was craving something fried so stopped and picked up some rabbit after teaching and whipped up my mother-in-law’s simple recipe.
Lots of lemon and sea salt and I was happy!
Her crispy batter is simply an egg and some flour, but the technique amazing.
Tina’s Fried Chicken
Put your pieces of chicken or rabbit in a bowl.
Beat and egg with some salt and pour on the meat.
Mix well.
Add enough flour to create a paste.
Fry.
It will look like there is not enough batter, but it is PERFECT.
Salt before serving.
Pull out a beer and enjoy!

Looks delish! It’s actually too hot here in Warsaw to cook as well so we are heading to a hotel tonight to escape the heat and bury ourselves in an AC room! 🙂

You can’t beat quick and easy and what a better way to do it than fried chicken! Yum. You must have been reading my mind because its on the menu here tonight. Being a little cooler here in Australia at the moment I’m adding lots of spice to the batter to help warm us up on this rainy day along with some homemade skordalia full of garlic and lemon to help keep the germs at bay. 🙂
