ack in 1988, when I started teaching classes here in Florence, I searched for the best quality I could find from the Mercato Centrale, the Central Market at San Lorenzo. There I met the Conti family. They've been my adopted family since. In recent months, I've told Stefano what I would like to have available for my clients to take home to their kitchens. To my delight, Stefano, his mother Germana, and his wife Grazia have created a wonderful kit full of Italian cooking goodies for setting up a Tuscan kitchen at home -- the Divina Cucina Tuscan Kitchen Starter Kit.

Here's What's Included:
One Divina Cucina apron
One Divina Cucina cookbook, "From the Market to the Table"
One Mezzaluna chopping knife ("The Tuscan Cuisinart")
    with olive wood handle
1/2 liter bottle of the Conti Family estate-bottled
    extra-virgin olive oil ("Extra Vergine")
1/2 liter bottle of red wine vinegar ("Santa Tea")
3 ounces dried porcini mushrooms
6.5 ounce tube of triple concentrated tomato paste
3 ounces sundried tomatoes
3 ounces salt-packed capers
1 pound Farro Toscano (for Donatella's farro salad!)
2-1/2 ounce jar of black truffle paste
6 ounces Italian coffee

Sea Salt:
Grosso (large salt crystals for roasting or
    seasoning the cooking water for pasta)
Fine (fine ground salt for
    seasoning food while cooking)

Herbs:
Pure saffron threads from San Gimignano
2 ounce packages (thyme, chili pepper, fennel pollen,
    oregano, juniper berries, spicy mix for spaghetti --
    garlic, parsley, and chili pepper flakes)
3 ounce Sienese spices, known as droghe,
    for meat sauces or desserts like pumpkin pie or the
    Lucca version with spinach

Treats for cheeses:
1 pound chestnut honey (Fabulous in tea, better on cheese!)
Truffled honey (Excellent for duck breast!)
Mostarda Mediterranean (My own recipe made by
    Macelleria Cecchini -- hot pepper jelly to be served with
    Pecorino cheese and grilled meats)
7 ounce piece of Pecorino (Tuscan sheep's cheese)
1 pound piece of Parmesan
    (The best! From my friend in Parma, Bonat)

Sweets:
1 piece of Panforte, famous Renaissance dessert from Siena
9 ounce jar of fig jam
3 ounce sheet of gelatin for making Panna Cotta
    (The best dessert since tiramisu!)
One small Duomo-shaped bottle of Limoncello,
    lemon liqueur from Amalfi coast
1 pound each of ground almonds and powdered sugar,
    and 1 bottle of bitter almond essence
    (For making Ricciarelli cookies!)
